Chickpea Peanut Butter Chocolate Chip Blondies

These are insanely good. They come out a little tough and dry at first, but just let them cool a bit and they set nice and moist and DELICIOUS.

Chickpea Blondies

A healthy alternative to your average blondie with a peanut butter kick. You can use any nut butter really when making these. I just like peanut butter and chocolate together like any sane human being.

Chickpea Peanut Butter Blondies

Ingredients

  • 1- 15 oz Can Chickpeas
  • 1/2 Cup Peanut Butter
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1 Tbsp Cinnamon
  • 1 Tsp Vanilla
  • 1/3 Cup Maple Syrup
  • 1/4 Cup All purpose flour
  • 1/2 Cup Chocolate Chips

Instructions

  • Preheat oven for 350 degrees. Place all ingredients EXCEPT chocolate chips into a food processor and blend until smooth.
  • Fold in chocolate chips and put into a greased 8×8 baking pan. Sprinkle with extra chocolate chips on top if desired.
  • Bake at 350 for 25-30 minutes
