Healthy Cinnamon Roll Oat Bars

Before making this, I was thinking of a breakfast option that was quick, easy to put together and would require no prep time before eating in the morning.

Oat bars are one of the best breakfasts if you’re on the run. I just pop it in the microwave for 15 seconds and throw my favorite yogurt on top.

You can put peanut butter, maple syrup, berries, whipped cream, warm milk, nutella…. anything you want!

They are also a good way to make your kids believe they’re eating a dessert for breakfast.

I used olive oil in this recipe to get some healthy fats in there instead of butter. The oats are a good serving of soluble fiber, which helps keep us nice and full.

Cinnamon also has a few anti-inflammatory properties!

A super quick meal prep for breakfast! Full of cinnamon flavor!

Equipment

  • 8×8 in pan

Ingredients

  • 3 cups Rolled Oats
  • 2 Eggs
  • 1 cup Almond Milk
  • 3 tbsp Olive oil
  • 2/3 cup Maple Syrup
  • 2 tsp Baking Powder
  • 1 tsp Vanilla
  • 1 tbsp Cinnamon
  • Pinch of Salt

Icing

  • 1/2 cup Powdered Sugar
  • 1 tbsp Water

Instructions

  • Preheat oven to 350 degrees. Mix all the ingredients in a large mixing bow and pour into a greased 8×8 baking dish. Bake for 25-30 minutes.
  • To prepare the icing just mix the two together in a small bowl. Once the bars cool, drizzle the icing! Enjoy!
