Kale Junkie is one of my favorite accounts to follow. She’s honest, real, and posts delicious recipes! She actually used to be a lawyer turned recipe developer and I just find that so inspiring. It goes to show that your paid career doesn’t have to be your final stop and you CAN do what you love to do.


Anyway, her chocolate chips are AMAZING, especially right out of the oven. You would have no idea these are made with tahini. They are gluten free, grain free, and oil free. Also can be made vegan with vegan chocolate chips and a flax egg!

I wanted to test out these legendary cookies and they DO live up to the hype!

Equipment

  • Sheet Pan & Mixing Bowl

Ingredients

  • 1 cup almond flour
  • 1 cup tahini (liquidy)
  • 1/2 cup maple syrup
  • 1 egg
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • sea salt to taste

Instructions

  • Mix the almond flour, maple syrup, tahini, and chocolate chips in a bowl. REFRIGERATE FOR 30 MINUTES.
  • After 30 minutes, preheat oven to 350 and mix in the egg and baking soda into the dough. Scoop dough onto a parchment lined cookie sheet and bake for 10-11 minutes. Sprinkle with sea salt when cooled and enjoy!
