Vegan Piña Colada Frozen Yogurt Bars

WOW. These bars definitely exceeded my expectations. They taste like mini piña coladas!

They are so refreshing, especially on a hot day. They are also only 100 calories!

These have a pretty subtle flavor and are not too sweet, which is how I like them. You could always add more pineapple, honey, or coconut to the mixture to get the flavor how you like it.

IMPORTANT: these bars will need to be kept frozen until you’re ready to eat them. Let them sit for like 15 minutes before eating and they will be nice and easy to eat.

Vegan Pina Colada Yogurt Bars

Equipment

  • 8×8 pan
  • Parchment paper

Ingredients

  • 10 Dates Pitted
  • 3/4 cup Pecans
  • 1/3 cup Rolled Oats
  • 18 oz Vanilla Coconut Milk yogurt Can use any yogurt for this!
  • 1 tbsp Honey (optional)
  • 1/4 cup Diced Pineapple
  • 1/4 cup Shredded Coconut (optional)

Instructions

  • Place the dates, pecans, and rolled oats into a food processor and blend until a slightly sticky crust forms. Place the crust on top of parchment paper in an 8×8 baking dish and flatten with hands to make a crust.
  • Mix all the other ingredients, besides the shredded coconut, in the food processor until smooth. Pour liquid onto the crust and let settle.
    If you'd like to add coconut to the top, preheat oven to 350 and place the shredded coconut onto a baking sheet and cook 5-10 minutes or until brown. Watch CLOSELY. They burn quickly. This is optional. You can top these bars with whatever you would like.
    Place in the freezer and freeze for 3-4 hours. Check periodically as it make take less time to harden. They should be hard enough so that they won't start to bend when you pick them up by the parchment paper.
  • Cut into 9 squares and serve! Store leftovers in the freezer! These will start to melt in the heat, but are perfect for a hot summer day!
