Shakshuka Brunch

One of my favorite brunch recipes is Shakshuka! It’s a middle eastern dish and is full of flavor. The best part is you don’t have to be very talented in the kitchen to impress someone with this dish.

Shakshuka Prepped Vegetables

It is made with very minimal ingredients and packed with flavor. The whole recipe takes less than 30 minutes when you’re on a pinch for time.

I made a brunch with this dish and my Strawberry Shortcake Donuts. With some mimosas, this is a quick brunch that is perfect for a weekend morning.

Making this dish made quarantine feel a little less bleak. It felt like we were eating quality restaurant breakfast.

I would also recommend serving this dish with some warm Naan bread. All you do is put the oven to 350 and place the naan directly on the rack for about 5 minutes until it gets a little crispy and warm.

Easy Shakshuka

Easy to make shakshuka that tastes absolutely delicious, made in about 30 minutes!

Equipment

  • Large frying pan

Ingredients

  • 1 Red Bell Pepper Diced
  • 1 Onion Diced
  • 4 Cloves Garlic
  • 2 tsp Paprika
  • 2 tsp Cumin
  • 1/2 tsp Chili powder
  • 1 28 oz can Whole or crushed tomatoes
  • 1/2 dozen Eggs
  • Fresh Parsley for garnish
  • Salt
  • Pepper

Instructions

  • Dice up the red bell pepper and onion. Heat pan with oil and cook the onion and pepper over medium heat until translucent. Once veggies are cooked, add the garlic and spices. Stir for about a minute then add the canned tomatoes. If using whole tomatoes, then crush the tomatoes with a fork/spoon. Stir and let simmer for a few minutes. Make small holes in the sauce with a spoon and add an egg to each hole. Cover the pan and let the egg cook for 5-10 minutes. Serve with warm Naan bread or crusty whole wheat bread! Best served immediately after cooking.
